What’s a better way to start off your Friday then with banana pancakes? Try starting it off with blueberry banana pancakes & cinnamon coffee. That’ll have you whistling to work! The best part about these delicious pancakes is that you only need 2 ingredients. Super light and guilt free breakfast for anytime you need a quick pancake fix.
Here is Friday’s Recipe:
(Optional: I added blueberries, 1 tsp of Vanilla, and a dash of cinnamon)
1. In a small bowl, Mash Banana.
2. Mix in 2 eggs until smooth.
3. Add any extras you desire.
4. Cook and enjoy!

Again, a pretty strong rating for the win! A 9 or a 10 would have to be reserved for the real thing. I added vanilla and a dash of cinnamon but you can add anything you’d like. We didn’t even add syrup but did add butter. I’ve heard of people using honey or peanut butter as well. We will be having these again very soon.
This weeknd we will be watching the Texans playoff game with family and also visiting my brother sister-in-law, niece, nephew and mom for dinner on Saturday. (Go Texans! One can dream 🙌) Have a lovely weekend yourself!😉
